Production Method

DISTILLATION PROCESS

Distillation is the heart of mezcal making. Through heat, alcohols and aromas are separated, concentrated, and refined to reveal the purest essence of the agave. The method used brings character, depth, and unique nuances to each expression.

CLASSIFICATION

We use a numerical system from 1 to 5 to evaluate sugar content. Low numbers present sweet notes, while high numbers offer more herbal flavors.

Unrested

Bottled immediately after distillation, it preserves the purest and most vibrant expression of the agave.

Artisanal Tradition

The agave is cooked in masonry or conical ovens, providing distinctive smoky notes. Milling is done using a tahona or traditional mill.
